Rogan Josh - a popular classic favourite for lamb.

Goan Beef - a richly flavoured aromatic dish

Murgh Masala - A mild recipe for chicken with a
subtle flavour. The spices enrich a yoghurt, tomato
and ginger sauce.

Pork Vindaloo - A rich, hot spicy dish invented by
the Portuguese in Goa. Beef or Goat can substitute
the pork if desired.

Lamb Madras - A slow cooked lamb curry where the
sauces are absorbed and the curry matures to a full
flavour. Beef or Goat can also be used.
